Growing up, we always had a well stocked pantry, full of canned goods – both store bought AND home canned. It always amazed me how quickly my mom (or dad) could pull a meal together from that stockpile. Green beans, diced tomatoes, tomato sauce, kidney beans. Canned salmon and chicken. Broth of all sorts. So many quick and delicious meals came from that pantry…but let’s not talk about the canned mushrooms.
As a grown up, I definitely love having a stocked pantry. I’m a big fan of canned beans and tomatoes, especially. I can usually cobble together a fast and healthful meal in no time if I have those on hand. Canned foods are a lifesaver for this busy, work from home mom! On nights where I’m leaning towards takeout, I can do a 180 and hit up the pantry – canned foods make a quick, homemade dinner doable by nixing the prep work (soaking beans can be time prohibitive) and by making seasonal ingredients deliciously accessible year round – canned tomatoes are sweet and wonderful in January. Which is something you can’t say about store-bought ‘fresh’ tomatoes during the winter.
February is National Canned Food Month. I’m super excited to start my journey as a ‘canbassador’ with the Cans Get You Cooking campaign. Over the next year, make sure to look for fun features and some yummy original recipes from me showcasing the healthful side of canned ingredients!
