A year or two ago, if you would have said the word “quinoa”, I would have asked you what the heck you were talking about. Quinoa. Keen-wa. I first tried this strange food at Fitbloggin’ and immediately loved it. Back home in North Dakota, I quickly forgot about quinoa until the other day when my friend Josh posted this awesome recipe on our Shrinking Kitchen wall. I used a bit of the original recipe, a bit of Josh’s take on it, and made it my own. LOVE.
