As much as I adore pumpkin, I’m not a big fan of pumpkin pie. Call me crazy. I’m not even sure why. I usually go for the pumpkin cheesecake or apple pie on Thanksgiving. However, this year, I will be devouring this pumpkin chocolate torte!
I stumbled upon this recipe in Eating Well magazine a few days ago and it looked delicious. I was pleased to find that I had every single ingredient in my pantry/fridge, which is quite unusual for something that appears to be so fancy.
And while it LOOKS fancy, it comes together pretty easily. The bulk of the time for this recipe is in the cooling. So really, you’re letting the fridge do the work for you. Bake this the day before Thanksgiving and you’re golden. And everyone will be so impressed. Not only is it rich and uber-chocolately, it’s under 200 calories per serving…including the whipped cream. I KNOW.
Even your non-pumpkin eaters will inhale this torte. Trust me. It’s not that pumpkin-y. Just silky smooth chocolately goodness with a hint of spice and a wee trace of pumpkin flavor.
