Not only is pumpkin the belle of the ball (hay ride?) this time of year, it’s also a nutritional powerhouse, providing a healthy dose of vitamins A and K, potassium, magnesium, fiber and even a little protein.
So instead of stopping for a pumpkin spice latte for breakfast, take a few minutes and whip up this pumpkin cheesecake smoothie, which will give you a very filling 8 grams of fiber and 40 grams of protein as well as that spicy fall flavor with the traditional pumpkin pie spices.
In coming up with this smoothie, I found that while I wanted the body that Greek yogurt provides but not the tartness, so I subbed in cottage cheese instead. It adds the thickness and a good amount of protein as well.
I also added a little bonus graham cracker crust to the glass, which adds a handful of calories, as most of the crumbs are left on the plate, but if you drink the smoothie without a straw, you’ll get a little of the “crust” with each sip.
