A few nights ago we had no soccer practice, no ballet, no gymnastics, and no golf. A night at home without anywhere to run or jog or hurry to. It’s a rare thing in this house. So what did I do? I drug out every loaf and muffin pan I own, all the baking supplies, and I turned the TV on for my kids. Yeah, that’s how we roll sometimes. Of course, as soon as the kids heard the ‘cooking noises’ they came and begged to help. They love to mix and stir and are quite opinionated on ingredients. Basically, they think everything should have chocolate. Everything. And everything needs a topping or spread. Everything. Also, this spread is AWESOME with apples. My kids love to dip apples in all the things.
As soon as this loaf came out of the oven, I new I had a winner. It was beautiful. Perfect. And my kids were already in bed, so it actually got to sit and properly cool before we tore into it. When bread cools completely, it finished cooking inside, and it’s less doughy and gooey.
I hope you make this bread today. And I hope you let your kids help, and maybe dump in a few too many chocolate chips, because a few extra doesn’t really hurt when you’re using cacao nibs. But don’t tell my kids, because they thought it was SOOOOOOOO sneaky :)
