Everywhere I look online I am bombarded with one of two things; apples and pumpkins. Yes, it’s really that time of year. Along with the changing of leaves it also means the start of the holiday entertaining season, or disaster for your waistline. I’ve learned it’s better to just enjoy a little bit of something than to try and completely resist. Even better yet, I’ve re-made many of my favorite calorie-laden holiday foods to a lighter and even more delicious alternative.
I made these apple cups when I was craving apple pie but lacked the motivation to make pie pastry and wait for one to bake. For these I used brik pastry which is a texture between crepes and phyllo dough. It can be found in most Mediterranean, Greek, or Middle Eastern stores. If you can’t, then phyllo dough will work. You will need to use a little bit more as phyllo is thinner. If you’re gluten-free you can still enjoy these, it will just be a little more work.
