After a really wonderful weekend of celebrating with friends and over indulging in rich foods and adult beverages, I realized that I needed to get back on track quickly. One of my favorite ways to do that is with a tasty, fresh and revitalizing smoothie for lunch. Here is my version of a pomegranate and blueberry smoothie with coconut milk.
Adding in banana, flax oil and honey round out the flavors and bring a sweetness to balance the tartness of the pomegranate seeds and juice. You can use plain yogurt in place of the coconut milk and/or add almond butter for a little more protein if you like.
I add ice cubes and frozen berries for a really cold smoothie. If you don’t want to have little bits of the pomegranate seeds in your smoothie you can blend them a little longer or put the smoothie through a sieve before drinking. I actually enjoy the little bit of crunch, so I don’t bother straining them out!
