A chill is in the air and the leaves are turning – it’s soup weather!
Yesterday, we spent a good chunk of the day cleaning out our garage. Our house is small, so we’re going to renovate our garage into a family room – with hopefully a little office nook for me. Suffice it to say, there was a lot of junk in our garage and it was dirty work. We were tired, we were a little chilly.
A big pot of this warming, hearty chicken soup was just the ticket. It’s a little spicy, a little smoky and a lot delicious.
I served it up with all kinds of toppings – shredded low fat cheese, low fat sour cream, chopped cilantro, some avocado slices and lime for squeezing. And tortillas on the side for dipping.
Of course, you can’t go completely nuts with the toppers and sides without changing the nutrition info.
I find that a little dollop of sour cream, a handful of cilantro and a squeeze of lime make me a happy girl.
This is a really great soup to serve at a party – make a double batch, lay out all the accouterments and you’re good to go!
