Some nights, I just want straightforward, simple comfort food.
Like tonight, for instance. It was just me and the kids. I was exhausted, mentally and physically. I wanted something easy that I knew would satiate my screaming craving for greasy pizza.
So I MADE pizza.
Yes, making pizza sounds time consuming but honestly, it’s SO simple. The crust just needs a little forethought so it has time to rise, but other than that? It’s a cinch.
Listen. If I can do it, you can do it. Promise.
Tonight’s pizza came courtesy of what I had on hand. A jar of prepared pesto (this would also be fabulous with Elayne’s Kale Pesto), some light shredded mozzarella, cherry tomatoes out of my garden. That’s it.
Like I said, simple was all I could do…and I did simple VERY well. This Pesto Tomato Pizza is fabulous.
Don’t feel restricted to my toppings – go with what you have! Throw on some feta – some bell peppers – some spinach. This is your canvas, you pizza Picasso, you. Go for it!
