Sometimes you just want something basic, wholesome and delicious. That’s how I’ve been feeling lately. I’ve been working really hard to avoid sugar, refined flour, caffeine and dairy for about a week and though I feel pretty great, my cravings are outrageous. I need to have something healthy and easy on hand at all times so I don’t dive headlong into the leftover Easter candy.
These lentils are just the ticket. They’re super filling and full of fiber and protein. I made a huge batch to keep in the fridge. It’s wonderful on it’s own or mixed in a salad of dark leafy greens and drizzled with balsamic vinegar.
If you’ve never tried lentils before, this is a great starter recipe. It’s easily adaptable with different spices – curry or cumin would be delicious – and you can even add more water and have it as a soup.
