Yesterday, autumn arrived with a boom. Literally. We had an amazing thunder and lightening storm. The forecast for the foreseeable future is cool and rainy. Typical Washington weather.
Perfect weather for baking.
It’s no secret that I love to bake muffins. I see them as a challenge…how much healthy stuff can I fit into one recipe? Can I make them without too much added fat or sugar?
A few weeks back I as approached by California Almonds to make a better breakfast. I hemmed and hawed over how I’d like to use almonds in a recipe. So many ideas! I eat almonds daily and usually raw, so I was pretty excited to get cooking with them! It didn’t take me long to decide to bake some muffins.
I did the usual kitchen scan…what did I have on hand? Well, pears. Lots of them. My mom gave me two boxes full of pears and I’ve been working my way through canning most of them. But I had a few perfectly ripe pears that needed to be used, stat.
And so, Perfect Pear Almond Muffins came to be.
If you want your kitchen to smell like fall, you have to make these. Trust me, they will make YOUR breakfast (or snack) better.
