It feels like by this time of year, everyone is itching for warm weather. But, with several more weeks of winter left, finding a way to bring some sunshine into your day may be the only way to get through the end of the season. When I think about warm weather, fresh, delicious fruit is the first thing that comes to mind. Finding it now however, is expensive and the taste is often not very good. Instead, I like to make granola to give me an affordable and taste of the tropics.
Granola can be really expensive to buy in stores. Stop! Granola is so easy to make, versatile and the individual ingredients are inexpensive. There are dozens of ways you can make granola. I recommend starting off with small batches so that you can figure out which flavors you really like. If you want to mix in ingredients like chocolate chunks, wait until the granola has cooked and cooled or it will melt into a big mess.
To get started, try this peanut butter, coconut, almond granola. I’ll list some options that you can swap in parentheses.
