Is there anything better than a silky pasta dish, a glass of wine and some fresh heirloom tomatoes? I think not! This dish is so easy to make and comes together quickly for the perfect weeknight meal. It is loaded with beautiful tomato wedges, scallions and capers. The sliced garlic gets sauteed in the oil and adds a ton of flavor to marinate the vegetables.
I love the wide noodle of the Pappardelle pasta with the juicy wedges of the tomatoes, but you can use any pasta that you have handy. The beauty of this recipe that you can add some slices of chicken for a bit hardier meal or keep it simple and vegetarian, either way it is delicious.
The Fall rains are returning and my incredible crop of tomatoes are beginning to wind down, so this recipe is my homage to the end of summer. Try this one before the really juicy and tasty tomatoes disappear for the season!
I like to serve the pasta with a fresh green salad and a glass of red wine, leaving out the bread and extra carbs. I think marinating the tomatoes in the garlic and oil for a little bit while the pasta is cooking adds a ton of flavor, so do the tomatoes first. Once the pasta is cooked you simply pour the marinated tomatoes over the pasta and dinner is ready!
