I love panzanella salad, especially as the weather warms up, and you can find market fresh peppers and cucumbers. One of my favorite parts of a panzanella salad are those wonderful crusty croutons! So it just made sense to me to make my salad into a sandwich using really good focaccia bread, grilling it in a bit of good olive oil. Thus, the Panzanella Salad Sandwich was born! It is so easy to assemble, and really no cooking, just a few minutes to grill the bread. It is a quick weeknight meal, perfect for dining on the patio during our warmer evenings, or taking to the park or ballgame.
