I have never been a breakfast person, and traditional breakfast foods are just not something I’ve ever enjoyed. Sweet cereals, biscuits and doughnuts are delicious but not first thing in the morning. Instead, I would go for dinner leftovers, something heartier and savory. In our family gluten is not eaten often and although I wouldn’t say we eat a Paleo diet we do eat Paleo inspired meals regularly. If you haven’t heard about Paleo yet (also known as the caveman diet), you probably will soon!
People who choose to eat Paleo believe that our bodies are not made to eat many of the things we consume today. So they consume foods that our prehistoric ancestors would have had access to. This means that most dairy and grain products are out. One thing they don’t shy away from are natural fats. There are thousands of meals that have been remade Paleo, so for those wanting to make the switch they don’t have to fear giving up everything they have enjoyed previously. Paleo isn’t for everybody – but some people swear by it.
So, if you’re like me and a savory breakfast is more your style, you’ll really enjoy this easy breakfast (or anytime!) dish.
