Overnight Apple Pie Oatmeal

Oatmeal is one of my very favorite breakfasts, but cooking oatmeal from scratch early in the morning can be a total pain. Most of the time, I’m lucky if I can get coffee going in my zombie-like state. I’m not a big fan of instant oatmeal – WAY too much sugar for my liking, and seriously, who finds those teensy little packets filling?

On my recent Pinterest binges, I’ve been noticing a bunch of recipes for overnight oatmeal you stick in the fridge while you sleep…no cooking necessary. I was skeptical at first, but I’ve made it a few times and am in love! This particular recipe is my take on the trend, lightly sweet from applesauce with a little zest from pumpkin pie seasoning. So yummy.

The very best thing about this oatmeal? You mix it together right before you go to bed, and when you wake up, you have a healthy, delicious and filling breakfast at your fingertips. It’s so much easier to make healthy choices when everything is prepped and ready. Make this recipe and divide it into single serve containers and you can take your breakfast to go…and bypass the scone at the coffee stand.

Overnight Apple Pie Oatmeal

Prep Time: 5 minutes

Yield: 2 servings

Serving Size: About 1 cup

Gather

1 cup rolled oats
1 cup lowfat vanilla yogurt
1/2 cup unsweetened applesauce
1/4 teaspoon pumpkin pie spice
2 tablespoons ground flax seed

Step by step

  1. Mix all ingredients in a sealable container.
  2. Throw in the fridge overnight.
  3. In the morning, scoop out some oatmeal and top with almonds, raisins, cranberries...whatever you like.
  4. You can eat this cold or hot!

    Just confirming….oats are not cooked first.

      Tha’ts right. They soak up the liquid overnight. You can heat it up in the microwave if you like.
