My family really enjoys eating lentils. They are perfect in soups, stews or as a side dish. You can even use them as a thickener when pureed. I don’t think my husband and daughter think about the health benefits of eating lentils though. Lentils are not only creamy and delicious but chock full of fiber and protein.
My family’s favorite lentil recipe is my One Pot Chicken and Lentils. It is quick and easy and full of flavor and very versatile. You can put this dish together in about 20 minutes in one skillet. You can substitute tomatoes, green beans, asparagus or any other vegetable instead of the corn or add a combination of your family’s favorites. I use a can of cooked lentils, but you could easily cook dried lentils. Dried lentils only add about 30 minutes to the cooking time, but really cut down on the overall cost.
This recipe can be served with a salad to round out the dish or just serve it in a bowl with a piece of crusty French bread. I know your family will find this dish delicious and satisfying.
