January. The time where many make resolutions, mostly revolving around eating better, exercising more and generally trying live a healthier life.
I’m three days in to re-committing to clean eating. I kind of had a torrid affair with all things sweet over the holidays and my body is not happy. Not at all. I am such a ridiculous sugar addict and things got out of hand.
Now I’m back in the driver’s seat. All the goodies are out of the house. The fridge is bursting with fresh fruits and vegetables and lean protein. I’m starting my day with lemon water sweetened with honey. Smoothies are my friend and yes, I’m even juicing.
Clean eating can feel arduous – but the rewards you reap are completely worth it…even after a few days, I feel my energy returning, I see my skin glowing and my mood is just better. No more sugar rage (it’s real, I kid you not).
I find the best way to keep myself on track is to always have something ready to eat that is nourishing to my body. This kale and bean soup, brimming with vegetables and clean protein from aduki beans, fits the bill. I chose aduki beans for this soup because they are easier to digest than most beans – but feel free to use what you like – cannellini beans work perfectly. Also, don’t feel restricted by what vegetables I used. This is one of those ‘use up whatever is languishing in your cripser’ soups. Anything goes.
Make a big pot of this soup on a stormy January evening and enjoy it for lunch or a warming snack for days to come!
