We had a huge garden in our backyard when I was growing up. My parents had six kids to feed, so they grew as much of their own food as possible. We had amazing fresh produce for a large part of the year in our house. Mom was good at saving vegetables in cold storage in our garage for the winter. One of the veggies she saved was her Acorn Squash. She made this sweet, salty and gooey dish that was so filling and satisfying, it made you forget you were eating squash!
As an adult, I have discovered that the reason we all liked it so well, was because she stuffed the Acorn Squash with bacon, brown sugar and lots of butter! So yummy yes, but not the best for you, so I decided I was going to find a way to capture the same flavors but make it less calories. Here is my version of my mom’s acorn squash recipe.
