If you saw yesterday’s Pinterest Roundup, you know we’re a bunch of muffin lunatics around this house. Last week my five year old came home from school and I asked him what he’d like for a snack – and he declared we needed to make muffins. He saw Pioneer Woman (aka the Ranch Show Lady) make some last week and has been obsessively thinking about muffins since.
Baked goods probably aren’t the healthiest of snacks, but I figured we could come up with something that satisfied his muffin craving and was relatively healthy. I did a quick assessment of ingredients on hand and decided we would make banana muffins. With coconut.
Or, as I have dubbed them, Monkey Muffins! They’ve got great banana flavor with a nice hint of coconut – totally tropical and yummy! And my Monkey Muffins became Mini Monkey Muffins when the five year old decided we HAD to use the mini muffin tin – he even got it out himself and painstakingly put in the liners.
How could I say no? I love that he loves to help in the kitchen.
These are a wonderful little snack treat or serve them for breakfast with some fruit or yogurt.
