I don’t make a habit of photographing my everyday meals but I’m glad I had my camera in the kitchen for this one because this omelet was awesome.
I was feeling particularly virtuous at lunchtime and took out the carton of egg whites and a bag of prewashed, precut kale. Hmmm … egg whites and kale is a good start but pretty Spartan.
How can I turn this kale omelet from Spartan to spectacular?
I grabbed a package of reduced-fat shredded Cheddar and a single-serve cup of guacamole and that did the trick. And between the cheese and the guacamole, you don’t have to add any extra salt, but a shot of hot sauce would be good, too. This is a delicious way to cut back on carbs and load up on protein and fiber.
