How is it Thanksgiving already? I have to be honest, it’s my favorite holiday, even though I generally end up a bloated mess. I have a hard time saying no to dressing and gravy, you guys. It’s a sickness. And, if you’re like me, you sample as you cook. So on top of the actual meal, I’ve already eaten a meal during prep. And I get a little stressed and soothe myself with wine. Thanksgiving can be stressful!
One thing you don’t have to worry about this week? A menu plan! I’ve designed this weeks plan to be fairly simple. Everything is either quick or goes in the slow cooker. I’ve even incorporated leftover turkey into Friday’s recipe.
Now, go forth and have a wonderful holiday. Enjoy your favorites. Drink a LOT of water.

Monday: Spaghetti squash with roasted peppers and tomatoes.
Tuesday: Slow Cooker Char Siu Pulled Pork served with brown rice and steamed broccoli.
Wednesday: One pan goulash and frozen green beans, steamed until just done. This is the perfect meal for the day before Thanksgiving – no fuss and comes together quickly!
Thursday: Thanksgiving Day!
Friday: Cheesy chicken and rice bake – but subsitute leftover turkey if you have some! Serve with sliced tomatoes with a squeeze of lime juice and a sprinkle of salt.
Saturday: Super simple fish and veggies in foil served with quinoa.
Sunday: Poblano, white bean and chicken soup with baked tortilla chips.
Snack: Creamy Jalapeno Cranberry Dip with celery sticks.
