It’s Sunday afternoon – are you trying to menu plan for the upcoming week? Well, stop! Because we’ve got an amazing menu plan right here, complete with a printable grocery list!

MONDAY:  Baked Orange Chicken.

GROCERY LIST

 Baked orange chicken:

2 lbs boneless skinless chicken breasts
3/4 cup Light Catalina dressing
1/2 cup Orange marmalade
2 Tbs beef bouillon
2 Tbs dried onion flakes
1/2 tsp celery seed

 Spinach Lasagna:

8 whole wheat lasagna noodles
8 ounces part skim ricotta cheese
8 ounces part skim mozzarella cheese
1/2 cup shredded parmesan
1 package frozen spinach, thawed and squeezed dry
1/8 teaspoon freshly grated nutmeg
1 tablespoon olive oil, divided
1 medium onion, chopped and divided
4 cloves garlic, minced and divided
1 egg
1 15 ounce can low sodium diced tomatoes
1 15 ounce can low sodium tomato sauce
2 tablespoons dried Italian herbs
1 teaspoon salt, divided
Slow Cooker Barbacoa Beef:
3 pounds lean beef roast, such as eye of round or top round
2 whole onions
3 Tablespoons olive oil
8 cloves minced garlic
1 Tablespoon cumin
1-½ Tablespoon oregano
1 can small can of chipotle in adobo sauce
1 cup low sodium chicken broth
1 cup water
2 Tablespoons vinegar – white, red wine or rice wine all work
1/2 teaspoon sea salt
Baked Cod
1 pound cod fillets
1 sweet onion, sliced
1 yellow bell pepper, cut into strips
1 green bell pepper, cut into strips
1 lemon, thinly sliced
1/2 teaspoon harissa spice powder
1/4 teaspoon sea salt
pepper
2 tablespoons olive oil, divided
Green Olive Chicken
1 pound chicken breast tenders
1 tablespoon olive oil
1/4 teaspoon salt
pepper
1/2 teaspoon dried italian herb mix
2 cloves garlic, smashed and minced
1/2 cup chopped green olives with pimentos
1 yellow bell pepper, chopped
1 15 ounce can low sodium diced tomatoes, drained
Quinoa Patties
1 tablespoon olive oil
1 1/4 cups water
1/2 cup dry quinoa
1 cup canned low sodium black beans
1 cup panko bread crumbs
1 egg
1/3 cup salsa
1 teaspoon cumin
1/2 teaspoon chipotle powder
Angel Hair Pasta with Artichokes
1 cup chicken broth, organic low-sodium
1/4 cup white wine
1 lb chicken breasts, cooked and cut into pieces
1/2 cup cherry tomatoes, diced
1 can artichoke hearts, rinsed and drained
2 tbsp butter
2 tbsp all purpose flour
2 tbsp, canned capers, drained
parsley leaves
12 oz whole wheat angel hair pasta
