Happy Sunday everyone! Are you gearing up for a weekly grocery trip? I definitely am. We have house guests this week and menu planning is vital for my sanity.
I’ve tried to create a menu this week that utilizes a lot of the same ingredients in different recipes. This saves money and space in your pantry!

Monday: Hearty Vegetable Soup served with hearty bread.
Tuesday: Salad Bar! Chopped rotisserie chicken, hard boiled eggs, rinsed garbanzo beans, shredded low fat cheese, loads of chopped carrots, cucumbers and bell pepper, a few different low fat dressings and mixed greens. Everyone assembles their own.
Wednesday: Slow Cooker Orange Beef with brown rice.
Thursday: Mom’s Turkey Meatloaf with baked potatoes and steamed broccoli.
Friday: Takeout or leftovers. You deserve a break after all this cooking!
Saturday: Southwest Turkey Burgers on whole wheat buns topped with tomato and avocado, served with sweet potato fries.
Sunday: Enchilada Casserole in a Hurry.

1 1/2 pounds beef round steak, sliced or beef stir fry strips
1 dozen eggs
3 lbs ground turkey breast
1 pound ground sirloin

low fat Monterey jack cheese
