This week’s menu plan is really fun and varied – lots of spices (flavorful, not spicy!) to tempt your taste buds! These recipes are some of my favorites…a super easy lo mein that comes together in 20 minutes. Cozy tortilla soup. Even some crock pot beef barbacoa that’ll knock your socks off!

Monday: Loaded Burger Lettuce Wraps with baked potato chips.
Tuesday: Chicken Tortilla Soup.
Wednesday: Creamy Cajun Shrimp Linguine with green salad.
Thursday: Slow Cooker Barbacoa Beef on soft flour tortillas.
Friday: Go out to eat or have some delicious leftovers!
Saturday: Easy Weeknight Lo Mein (even though it’s a weekend).
Sunday: Black Bean and Yam Enchiladas.
Dessert: Strawberry Banana Sorbet.

Weekly Menu Plan Your Butt Off Grocery List:
Loaded Burger Lettuce Wraps
1/2 pound lean ground beef
4 dill pickles
1 beefsteak tomato
1/4 cup sweet onion
2 tablespoons ketchup
1 tablespoon mustard
1 head romaine lettuce
shredded cheddar, if desired
bag of your favorite baked potato chips
Chicken Tortilla Soup
2 boneless, skinless chicken breasts (you can save yourself a whole lot of time by using a rotisserie chicken)
2 garlic cloves
1 poblano pepper
1 red bell pepper
1 1/2 teaspoons ground cumin
1 teaspoon chipotle chili powder
1 teaspoon garlic powder
1 10 ounce can of Rotel
4 cups low sodium vegetable broth
3 tablespoons tomato paste
2 15 ounce cans of black beans
3 tablespoons cornmeal
4 small corn tortillas
Creamy Cajun Shrimp Linguine
1 (14-ounce) can fat-free, less-sodium chicken broth
6 ounces uncooked linguine
1 pound medium shrimp
1 1/2 tablespoons butter
1 (8-ounce) package presliced mushrooms
1 large red bell pepper
2 teaspoons all-purpose flour
1 teaspoon salt free Cajun seasoning (I found mine in the bulk spices at my local supermarket)
2/3 cup fat free half-and-half
1/4 cup chopped fresh flat-leaf parsley
green salad fixings, including dressing
Slow Cooker Barbacoa Beef
3 pounds lean beef roast, such as eye of round or top round
2 whole onions
8 cloves minced garlic
1 Tablespoon cumin
1-½ Tablespoon oregano
1 can small can of chipotle in adobo sauce
1 cup low sodium chicken broth
2 Tablespoons vinegar – white, red wine or rice wine all work
soft flour tortillas
shredded lettuce, guac, diced tomatoes…whatever you’d like in your barbacoa taco!
Easy Weeknight Lo Mein
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
2 tablespoons honey
1 teaspoon toasted sesame oil
2 teaspoons grated fresh ginger
2 cloves garlic
1/2 teaspoon hot chili sauce
1 teaspoon cornstarch
1 tablespoon canola oil
8 ounces grilled chicken breast (rotisserie is fine too)
8 ounces dry whole wheat spaghetti
2 large carrots
4 cups cabbage,
2 green onions
Yam & Black Bean Enchiladas
2 1/2 tablespoons chili powder
2 tablespoons flour
1 15 ounce cans of tomato sauce
1 1/2 cups lower sodium chicken broth
3/4 teaspoons garlic powder
3/4 teaspoons onion powder
1 1/4 teaspoons cumin
1.5 cups of the enchilada sauce
1/2 medium onion
1 cup yam
1 15 ounce can black beans
1/2 cup shredded sharp cheddar cheese
9 small corn tortillas
