Hello there, friends! How are you this fine Sunday? Christmas is inching up upon us; are you ready? Have you been baking your buns off? I really need to get going on this holiday stuff, you know, before it’s over. Maybe if I plan out my dinner menu for the week, I will have more time to get things done? Or have more calories to waste on sweets? If these recipes aren’t your style, we have weeks and weeks of free, delicious, and healthy menu plans for you to choose from! Check them out!

Monday:  Quinoa with Black Beans and Cilantro.

Tuesday:  Pork Chops Marsala.

Printable Grocery List

For General Tso’s Chicken:

4 tablespoon cornstarch
1 cup low sodium chicken broth
4 garlic cloves
2 teaspoon fresh ginger
2 tablespoon honey
2 tablespoon low sodium soy sauce
1 tablespoon red pepper flakes
1 pound broccoli
1 pound boneless skinless chicken breasts
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon vegetable oil
two cups prepared brown rice
green onions and sesame seeds (optional)

For Quinoa with Black Beans and Cilantro:

1 tablespoon extra virgin olive oil
2 cups chopped white onions
1 cup chopped red bell pepper
1 cup quinoa, rinsed, drained
2 teaspoons chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt
1 1/2 cup water
1 15-ounce can black beans
1/2 cup chopped fresh cilantro
1/2 lime
Crumbled Cotija cheese or feta cheese (optional)
1 avocado (optional)

For Porkchops Marsala:

6 tablespoons all-purpose flour, divided
4 (4-ounce) boneless center-cut loin pork chops (about 1/2 inch thick)
Cooking spray
1/3 cup minced shallots (about 2)
2 teaspoons bottled minced garlic
1 (8-ounce) package presliced mushrooms
2 teaspoons chopped fresh thyme
1 cup fat-free, less-sodium chicken broth
1/4 cup Marsala wine or dry sherry
1/4 teaspoon salt
1/4 teaspoon black pepper

For Pesto Alfredo:

spaghetti squash or spaghetti noodles
2 avocados
1/2 cup packed, fresh basil
4 tbsp. lemon juice
2 tsp. garlic powder

For Cilantro Thai Grilled Chicken

2 garlic cloves, coarsely chopped
1/2 cup cilantro
2 tablespoons asian fish sauce or 1 tablespoon of GF soy sauce
1 tablespoon toasted sesame oil
4 boneless chicken breasts

For Mediterranean Veggie Pita:

whole wheat pita bread, 3 slices
red, orange, or yellow pepper, 1
kalamata olives, 12 cut in halves
onion, 1/2 cup
asparagus, 8 spears
zucchini (or cucumbers if you prefer), half a regular-sized vegetable
baby spinach or mixed greens, 1 cup
feta cheese, 2 Tbsp
1 tsp olive oil

For the Cookies:

6 tablespoons unsalted butter
2 tablespoons canola oil
5.6 ounces all-purpose flour
3.3 ounces whole-wheat flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
3/4 cup packed light brown sugar
2/3 cup granulated sugar
1/2 teaspoon vanilla extract
2 large eggs
1/2 cup semisweet chocolate chips
1/3 cup dark chocolate chips
