It’s Sunday and we’ve got a fresh and delicious menu plan, with a printable grocery list…all for free!

We’re in the final stretch before Christmas. Admittedly, I’m not always making the best food choices, but I know with a healthy menu plan, I’ve got a chance to succeed! Especially since this menu plan has some of my most adored meals. It’s got my favorite chicken cutlets, delicious salmon cakes, scrumptious and healthy Mexican stir fry and stuffed yellow squash..plus lots more. It’s all healthful and family friendly. It’s healthy menu planning made simple!

Chicken Cutlets & Caesar Salad

8 chicken tenderloins
1 cup panko breadcrumbs
1/4 cup whole wheat flour
1 teaspoon garlic powder
1 teaspoon lemon zest
2 egg whites
2 romaine hearts, halved
3 tablespoons extra virigin olive oil, divided
2 cloves garlic, smashed and minced
4 tablespoons panko breadcrumbs
1 ounce shredded parmesan
Chili Stuffed Squash with Green Salad
4 medium sized yellow squash
½ red bell pepper
1 jalapeno pepper
½ small onion
2 scallions
2 cloves garlic minced
2 Tablespoons tomato paste
1 teaspoon chili powder
½ teaspoon cumin
½ teaspoon ground coriander
½ pound ground turkey
1 cup corn kernels (frozen and thawed or canned)
¼ cup grated Parmesan cheese
Confetti Turkey Meatloaf
1 cup diced onion
1 cup diced assorted peppers
2 cloves minced garlic
1 tsp olive oil
1 large egg
¼ cup grated Parmesan cheese
1 Tablespoon Worcestershire
¼ cup ketchup
¼ cup tomato salsa
1 lbs. ground turkey
1 ½ teaspoon salt
¼ to ½ teaspoon pepper
Spicy Ketchup Sauce
¼ cup ketchup
¼ cup salsa
Tabasco
1 pound green fresh green beans
Slow Cooker Pepperoni Chicken Marinara
2-4 cloves of minced garlic
16 slices of pepperoni, coarsely chopped*
1/4 teaspoon of dried oregano
1 1/2 cups of lower-sodium marinara sauce
2 tablespoons of chopped fresh basil (or 1/2 tsp of dried)
2 teaspoons olive oil
1 1/2 pounds of chicken cutlets
1/4 teaspoon freshly ground black pepper
1 cup shredded part skim mozzarella cheese
1 package whole wheat spaghetti
1 pound broccoli florets
Quick Salmon Cakes & Mexican Stir Fry
We’ve doubled the salmon cake recipe to serve 4
2 – 1 7 1/2 ounce cans salmon
1 1/2 cups oatmeal (uncooked)
1/2 cup chopped green pepper
1/2 cup chopped carrots
1/2 cup of chopped red onion
2 clove chopped fresh garlic
4 eggs
Pinch of cayenne pepper
2 medium yellow onions
1 yellow bell pepper
1 red bell pepper
1 green bell pepper
1 jalapeno, seeded
2 zucchini
1 yellow squash
1 teaspoon cumin
1/2 teaspoon chili powder
Chicken with Spring Vegetables & Herbs 
1.5 cups reduced-sodium chicken broth
1 teaspoon Dijon mustard
2 teaspoons plus 1 tablespoon flour
1 pound thin-sliced chicken breast cutlets
8 ounces sugar snap peas (2 cups)
1 14-ounce can quartered artichoke hearts
1 cup sliced mushrooms
3 tablespoons minced fresh herbs, like flat leaf parley and chives

Almond Butter & Chocolate Granola Bars
2 tablespoons coconut oil
1/2 cup unsalted almond butter
1/4 cup honey
1 cup rolled oats
l/4 cup ground flax seeds
1/2 cup crisp brown rice cereal
1/4 cup semisweet chocolate chips
