I live in the depths of hell…I mean Texas. Don’t get me wrong, I would never leave my beloved Lone Star State, except maybe in July and August, when like this week, the temperature climbs to a sweltering 104 degrees. Yeah, not cute. Or cool. So when the temperature rises, I absolutely refuse to turn on my oven, and I try to use my stove as little as possible. My air conditioner is already working overtime (can’t wait to see that bill!) so there’s no need to tax it anymore.
Enter the slow cooker and the outdoor grill. Saviors!
This menu plan does call for some outside grilling (HELLO 4th of July party!), but with a cold beer and a spot of shade, you can do it! Even if it is 100 outside. Just got out and toss the food on and jump in the kiddie pool, or river, or big pool if you’re lucky. OR, just put your husband in charge of dinner. You know how that goes, you get everything ready and make all the side dishes and then he throws the meat on the grill, turns it a few times, and claims credit for the entire meal. But I digress….
Menu Plan for July 1 – 7
MONDAY: Grilled chicken on top of Green Salad with Apple, Pecans, Feta, and Balsamic Dressing.
THURSDAY: Tropical Chicken Packets with brown rice
FRIDAY: Leftovers or go out to dinner!
SATURDAY: Slow Cooker Honey Sauced Chicken with brown rice and steamed broccoli
Desserts and Snacks:
Healthy Apple Pie – An All-American staple for the 4th of July!
Honeyed Yogurt Fruit Dip with strawberries (or other fruit for dipping)
Menu Plan Your Butt Off GROCERY LIST
1 pound 93/7 ground turkey
12 Chicken breasts (about 3 pounds)
4 lean pork loin chops, thin cut (about 4 oz each)
1 (1-pound) top round steak (1 inch thick)
4 ounces, Crumbled Feta Or Blue Cheese
1 (8-ounce) container low-fat sour cream
8 ounces light cream cheese
8 ounces plain, fat free Greek yogurt
4 medium yellow onions
1 large shallot
6 ounces, Baby Spinach
1 head Red Leaf Lettuce (or spinach)
4 Granny Smith Apples
10 medium Braeburn apples
1 medium sweet red pepper
fresh ginger root
16 ounces of Brussels Sprouts
1 English cucumber or 3 Persian cucumbers
1/2 cup torn basil leaves
1 (5 ounce) package spring mix salad greens with herbs
4 cups sliced strawberries (or 2 cups and 2 cups of another fruit)
2 cups sliced mushrooms
chipotle chili powder
3 cups all-purpose flour
1 cup beef broth
1 cup honey
red pepper flakes
dried ground sage
apple cider vinegar (1/2 cup)
red wine vinegar
powdered sugar (2 TBS)
7 tablespoons vegetable shortening
1/2 cup apple cider
1/4 cup canola oil
1/2 cup + 2 tablespoons chopped walnuts (or pecans)
1/4 cup sliced almonds
1/4 c lower-sodium soy sauce
2 tablespoons Dijon mustard
1 15 ounce can of chickpeas
1/2 cup panko bread crumbs
1 can (20 ounces) unsweetened pineapple chunks
6 wheat burger buns
1/4 cup reduced-sodium teriyaki sauce
1 cup unsweetened apple juice
2 Tbs maple syrup (you could probably sub brown sugar)
