This time of year it can feel like there’s always a party to go to and a dish to bring. Whether it’s a work Christmas party, potluck at a friends home, or your annual family get together there’s never a shortage of events. It’s also easy to fall into the holiday trap of gobbling up all of the delicious goodies! One “rule” I always follow when I’m asked to bring something is to make something that I know fits into my (or my family’s) dietary needs. With having had weight loss surgery and having a husband who is gluten-free, this ensures there’s at least one thing we can eat. If you’ve got picky kids, this is also a good rule of thumb to follow!
I try to eat a high protein diet and my husband loves tuna, and that was how this easy appetizer was born. In Mediterranean countries there is a heavy presence of seafood, olive oil, and fresh vegetables at every meal. This dish combines all of them – plus it’s Christmas colors! If you’re headed to a holiday party, bring the topping and bread separate and assemble there so that the bruschetta doesn’t get soggy.
