There are a lot of fussy, high maintainence dishes that make up a Thanksgiving meal.
This is NOT one of them.
Acorn squash is inexpensive right now and so sweet and delicious when roasted with maple syrup. The cayenne adds just the right amount of heat and the rosemary is aromatic and lovely.
If you’re looking for something familiar yet still a bit unusual and unexpected to grace your Thanksgiving table, I highly suggest you whip up some of these heavenly slices. And even if it’s not Thanksgiving – these are wonderful year round. Grab a bunch of squash at the supermarket while they’re cheap, and store in cool, dry place. They’ll last for a while and you’ll always have a go-to side dish!
