I was in Whole Foods drooling my way through the deli section recently and couldn’t resist when I noticed a container of mango quinoa. I brought it home and was SO excited to try it – I didn’t even get the groceries put away first.
And then it was meh. I was so disappointed! So much promise. I don’t know if I got a bad batch, but it didn’t tasty mango-y or anything. Sad face. But a seed had been planted. A few adjustments and I came up with this delicious Mango Curry Quinoa!
It honestly doesn’t get much simpler than this – hardly any prep. It’s full of protein and is SO delicious. You could eat it as a main dish with a salad, or as a side with some grilled chicken.
You can pick up mango chutney at pretty much any market. I found mine at Trader Joe’s. Just use what you like. And don’t forget to share (or not)!
