I did not grow up eating green bean casserole. I knew nothing of the luscious, creamy green bean mixture topped with crunchy onions until I started spending holidays with my husbands family.
They’re all about the green bean casserole.
Green bean casserole is some good stuff and for many, it’s a holiday staple. But personally, I’m not down with condensed mushroom soup and try to avoid it most of the time. Which poses a problem, as it pretty much defines what the traditional dish tastes like.
To reinvent the this coveted classic takes finesse. I wanted something similar in taste, just healthier. This casserole has all the flavors, but honest-to-God, they’re even better.
Trust me, I know green bean casserole is not something to be messed with and I would not lie about this ever. EVER.
Serve this up for Thanksgiving. I don’t think anyone will complain about it being ‘different’ than the original. In fact, I’d probably double the batch.
