Craving a bit of summer? After a crazy winter of unpredictable weather and a ton of dark and dreary days, I needed to make something that reminded me of a great summer meal on the patio. This Mahi Mahi with Peppers and Noodles does the trick for me, with its bright colors and spicy kick.
The sauce for the fish is a play on one my sister-in-law does for her skewers. I found some really nice wild caught Mahi Mahi, but any good quality white fish will do, like Black Cod or Halibut. I added some fennel to the pepper mix for a little more crunch and sweetness.
So put on your shades, flip flops and enjoy a piece of summer! Easy to prepare and a quick weeknight meal that will wake you up and help you get through the last days of winter!
