If you’ve been on Pinterest, ever, you’ve seen salad in a jar. I’ve always wanted to give it a try, but like many things I’ve Pinned, that particular Pin has languished on a board for months and months.
Of course I said yes. Because I’m obsessed with canning and jars and these are just SO pretty.
Did I mention they’re pretty?
Life has been pretty hectic, plus there’s not a whole lot of in season produce to can right now, so I figured this was the perfect opportunity to try out the ‘Salad in a Jar’.
I gathered my ingredients: romaine, arugula, red pepper, green onions, grilled chicken, shredded carrots, broccoli, cucumber and sesame seeds. You may notice tomatoes in the picture, but I vetoed the tomatoes at the last minute as I had chopped them and figured they’d become a soggy, hideous mess after a few days in the fridge.
Then I chopped. I chopped a lot.
I lined my jars up in a little assembly line and divided my ingredients into each. The heartier veggies…the carrots, peppers, and broccoli came first. Then the cucumber, onions and the chicken. I sprinkled some sunflower seeds and finally, I jammed as much romaine and arugula into the top as possible. By the way, you can fit A LOT of lettuce in if you press down. Tons.
I made a few so I’d have salads for a few days with very little work. Some people add dressing to the bottom if they’re transporting to work, but I opted to leave the dressing out. Whatever floats your boat.
When I was ready for lunch, I dumped one of those bad boys out onto a plate, topped with my favorite dressing and grubbed.
Now that I’ve made these, they’ll definitely be going into my rotation.
This recipe only makes one jar, FYI, but you can simply multiply the ingredients by how many jars you’re assembling. Make a week’s worth and you’ll have an easy, go-to meal at all times! Also, don’t be limited by my ingredient list. You can easily add cheese, eggs, beans and all sorts of other veggies. Very, very versatile!
