We do breakfast for dinner a lot around here. That mostly consists of scrambled eggs, french toast and fruit. Which is a pretty balanced dinner, when you think about it. But truth be told, I usually only eat the French toast and fruit because…shhhh…I don’t like eggs.
There, I said it. I do not care for eggs. Trust me, I’ve tried. I did go through a phase when I was pregnant where I ate about 6 hardboiled egg whites a day, but that has since passed and I’m back to not loving eggs.
I will, however, make an exception for quiches and frittatas, because there are enough things mixed with the egg that they’re disguised..so I can get the nutrition from the eggs without really TASTING them.
Of course, if you adore eggs, like most people seem to, this will be right up your alley. So it’s a win-win. Both egg eaters and non-egg eaters will dig right in to this super healthy and delicious frittata! Play with the veggies and even sub feta or cheddar for the parmesan. It’s very versatile and the perfect dish for any meal!
