Though I adore bread, I try to avoid it in general. The last few months, I’ve been almost exclusively gluten free – not for allergy reasons, but because I just tend to feel better overall.
Usually, I don’t miss it too much, except when I smell fresh french loaves at the grocery store – or surrounding a delicious, juicy hamburger.
Last week, I was grilling hamburgers for my family and feeling quite sorry for myself as I’d resigned myself to a salad. Not that I don’t love salads…I do. BUT BURGERS. Burgers always win.
I decided to try to reach a happy medium…first, I started thinking about making a salad with a hamburger patty and fixings. Which has potential. But then it hit me…lettuce wraps! I’ve wrapped an an entire burger in a huge lettuce leaf before and loaded it up with healthier toppings, but it was a little messy. But lettuce wraps, with all the ingredients chopped and mixed together? That could work!
It DID work. It worked perfectly and my Loaded Burger Lettuce Wraps were perfectly satisfying – and I didn’t miss the bun at all.
Mix in your favorite burger toppings…even sprinkle a little shredded cheddar or pepper jack over the filling at the end. Or crumbled bacon? Just a little? Oh yes.
