Who doesn’t love lasagna? I know it’s a favorite around here. A little labor intensive, but completely worth it – warm and comforting. While I do enjoy a traditional meat lasagna, it’s not the most health conscious dish – primarily meat, cheese and noodles. This spinach lasagna is heavy on vegetables and still has cheese and noodles, but the cheese is part skim and the noodles are whole wheat.
Even your meat eaters will love this spinach lasagna. It’s rich and flavorful, with a wonderful subtle spice from the nutmeg – don’t leave it out! It gives the dish extra oomph. Spinach and nutmeg are a wonderful flavor combination!
While this might now be a meal you can throw together on a weeknight, you can totally make it a day ahead and leave it in the fridge till you’re ready to bake and eat. Serve with a big green salad…and a nice glass of red. Yum.
