Once in a while I get a huge craving for peanut sauce. And I’ll eat it on anything. Even with a spoon. Probably not the best idea – peanut sauce is high in calories and fat. Not the smartest indulgence.
A while back, Christy introduced me to PB2, and all natural peanut butter substitute made by grinding the peanuts and pressing out the oil. It comes in powder form and all you do is add liquid. I love it in recipes that call for peanut butter (not so much on it’s own).
So today, one of the peanut sauce cravings hit, and hit hard, so I decided to make some peanut noodles with my PB2. I had tofu in the fridge and thought that sounded good too…so peanut noodles with tofu (and LOTS of veggies) was born.
This is SUPER filling and delicious. Feel free to play with the amount of sriracha in the peanut sauce according to your taste. I originally put in a full tablespoon and was sweating my face off. So I reduced it to 1/2 tablespoon. Also, if you can’t get ahold of PB2, you can definitely sub regular natural peanut butter, or Better ‘n Peanut Butter. Obviously, both substitutions will affect the nutrition information – the regular peanut butter dramatically – so adjust accordingly.
Serve this dish hot or cold, garnished with cilatro and lime wedges for squeezing.
