{Lightened Up} Blue Cheese Roasted Walnut Dip
Who loves cheese? Who loves blue cheese?
I do, I do! The stinkier the better, and I love it best served with fruit and nuts.
There’s this grocery store that I frequent that sells this AMAZING blue cheese roasted pecan dip that is to die for. I’ve bought it several times and just recently took a look at the ingredients list.
And I thought…hey! I can lighten this up!
(Okay, I don’t really talk to myself yes I do.)
This dip actually is quite simple. The store bought version has some additives and stabilizers. This one is just simple. I lightened it up using light cream cheese and plain kefir, which is basically liquid yogurt. Not only is it simple, it is unbelieveably good. If you are a blue cheese fan, this is a must try.
Whip up a batch. Impress your friends. Or keep it all to yourself. I won’t judge.

Step by step
- Preheat the oven to 350F.
- Place the walnuts on a cookie sheet and roast in the oven for about 10 minutes (they'll smell toasty, but not burnt).
- Add the nuts and parsley to the bowl of a food processor and pulse for a few seconds.
- Add remaining ingredients and blend till well combined and fairly smooth.
- Store in the fridge.
- Serve with apple slices, pears and crackers.
