Christmas around our house means cooking with family and friends. We put so much effort into preparing fancy dinners but we don’t usually get very creative with breakfast. We usually stick with canned biscuits or store-bought donuts to keep it easy. Honestly, I don’t get very creative with breakfast during the year either – I’m mostly an “eggs and bacon” kind of girl, but every once in a while I like to spice up my morning meal. This Christmas morning, the stars (and ingredients) lined up and this spicy quiche recipe came together. This quiche even got the seal of approval from my picky daughter.
Now I would never call quiche healthy. Between the crust, the eggs, the cream and the cheese it seems that it’s loaded with fat. So after creating an almost full fat version, I attempted to keep all of the flavor but reduce the fat. I used non-fat Greek yogurt instead of cream, skimmed milk instead of 2%, reduced fat cheddar cheese, one less egg yolk and chicken sausage instead of pork.
This recipe has about 20% fewer calories than the original and still full of flavor. Serve this quiche with a side of fresh fruit and a glass of orange juice for a yummy start to your day.
