St. Patrick’s Day is this coming Sunday! I am only a teensy bit Irish, but man, do I LOVE the food on St. Pat’s. And the beer. And the whiskey. WOO HOO!
I adore a good corned beef and cabbage, but what I really love is a hearty Irish stew with some chewy brown soda bread. Can you say comfort food? Forget St. Patrick’s Day, I could eat that ALL YEAR LONG.
This soda bread is full of healthy stuff – whole wheat, wheat germ, steel cut oats and molasses. Yum. And I’ve subbed almond milk for regular buttermilk. Not because I wanted to go dairy free, but because it’s what I had on hand. I was a bit worried, but it turned out awesome!
Whip up a loaf for this Sunday – or for whenever. It’s fabulous as toast. Mmmmm.
