Tartines are French open-faced sandwiches topped with any number of delicious meats, cheeses, and vegetables. They make great appetizers or the perfect accompaniment to a steaming bowl of soup. I knew this recipe was a hit after my husband, who normally wouldn’t touch a pea or a mushroom with a 10 foot pole, readily ate 4 of them. There’s something about the bright green peas that made me smile. There’s nothing better in the middle of winter than a bright and colorful bite to eat! While you could argue fresh spring peas are the best in this recipe (and I would tend to agree) frozen peas are just as delicious and an easy substitute to make this year round. Adding grated cheese is optional, but I think the few extra calories are worth it!
