Broccoli has such a bad rap. And it’s so undeserved. Personally, I love it and I’m pretty sure I could eat it everyday. Raw, steamed, in a salad, in a stir fry, in a casserole – I love it all. However, this preparation - roasted - is one of my absolute favorites. I love the freshness of the lemon zest with the spice of the garlic. So yummy. It doesn’t even taste good for you…but oh my. Broccoli is SO GOOD for you.

Broccoli is loaded with vitamin C and is also high in vitamin K, folate and fiber. If that doesn’t convince you to give it a try, you should also take into account that it is considered a cancer fighter. As few as two two cup servings per week is enough to provide measurable health benefits.

So really guys. Eat your little trees. If you think you hate it, just try it roasted. Seriously. I bet you’ll change your mind – you’ll see the light! Broccoli, for the win!

Lemon Garlic Roasted Broccoli

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 4 servings

Serving Size: 1/4 of dish

Gather

2 broccoli crowns, cut into florets
1 tablespoon olive oil
2 garlic cloves, finely minced
zest of one large lemon
1/4 teaspoon red pepper flakes
1/4 teaspoon salt

Step by step

  1. Preheat the oven to 400F.
  2. Mix all ingredients except for the broccoli in a large bowl.
  3. Add the broccoli to the bowl and toss and massage the broccoli to coat with olive oil mixture.
  4. Spread the broccoli out on a cookie sheet and place in the oven.
  5. Roast for about 15 minutes until edges start to brown.
