Meyer lemons are not like your garden-variety lemon. Thinner-skinned and super juicy, they’re thought to be a cross between a lemon and a mandarin orange, so the flesh is a lot sweeter. I picked up a bag from Trader Joe’s and wanted to take full advantage of their awesomeness — skin and all — so I caramelized slices and mixed them into a skillet full of dinosaur kale, which is the darker, less curly variety.
The result was a perfect match of tastes and textures. The sweet-tart lemon paired with the savory bite of the kale. You could use regular lemons but the skin might be a bit too bitter.
