Juicy Parmesan-Crusted Baked Chicken
Last minute chicken. That’s what I’m calling this parmesan-crusted baked chicken recipe! It was the last minute, and I had chicken and no idea what I was going to make. I clicked over to Pinterest, found this recipe, modified it a bit, and dinner was on the table 1/2 hour later. For real.
In the future, I will probably dress this up with some fresh garlic, chopped dill, or even a little curry powder. It was wonderful on it’s own, but it could be the great base for so much more!

Step by step
- Preheat oven 425˚F.
- Place greek yogurt and cheese in a small bowl and mix.
- Put chicken breasts on baking sheet (I line my baking sheet with parchment paper to make clean up easy) and spread yogurt mixture evenly atop each.
- Next evenly sprinkle bread crumbs on top of each breast.
- Place in oven and bake for 20 minutes or until meat thermometer reads 165˚F.
- Tops will be golden brown and chicken will be incredibly juicy.
- Season with a dash of fresh cracked pepper and sea salt, if desired.
