Chia pudding is a wonderful breakfast that feels sinful – since chia, when soaked in liquid overnight, takes on a texture similar to tapioca. I personally adore tapioca, so I’m in love.
Top this breakfast treat with fresh fruit and slivered almonds. Make a double or triple batch and have it for breakfast all week! It keeps well when covered in plastic wrap.
One final word…give this pudding enough time to set up! It needs to be in the fridge at least 8 hours!
