Even though the mercury has been rising into the 90s this week, Fall is Fall, and that means it’s time to make homemade tomato basil soup. I love all soups – I don’t discriminate – but I absolutely ADORE tomato soup. As a kid, my favorite comfort food was a grilled cheese sandwich and a coffee mug of Campbell’s Tomato Soup made by my grandma. We would sit, dunking and slurping, without words, just groans of shared pleasure in our comforting weeknight ritual.
I miss those days. So much. The soup in the chipped coffee, the gooey cheese, my grandma.
Since I’ve grown up, I still enjoy the comfort of tomato soup, but I’ve come to realize there’s more to life than that can of condensed soup. I’ve experimented with many recipes, healthy and not, and this homemade tomato basil is IT. I got double-thumbs up from both of my kids, one of whom DETESTS tomatoes! Our house rule is you have to take one bite, and if you don’t like it, you don’t have to eat it. Well, my son (the tomato hater <—who’s child is he?) took his ‘one bite’ while scrunching up his nose aaaannnnnndddd blinked several times, took another bite, and ate the whole bowl while groaning. I didn’t gloat, but I did do a fist pump, and I might’ve high-fived myself.
So, in a nutshell, this soup is AMAZING. Make it today, and even your tomato-haters will be lovers. Serve it with a gooey grilled cheese. Trust me.
