Thanksgiving was different for our family this year. My dad spent it in the hospital and as my daughter put it…the meal wasn’t the same without Paw Paw’s pizazz. Each of my sisters brought their own special touch to the meal. My youngest sister and I made the turkey and dressing, another made buttered corn and mashed potatoes and yet another made green beans and a quinoa dish. She doesn’t do well eating lots of gluten so she made this dish to offset the temptation to eat too much of the dressing. We got the whole meal together and took a plate to my dad.
As you can probably tell, my family is really into cooking. We spend the holidays in the kitchen cooking together. In fact that’s how we visit. When I asked my sister for her quinoa recipe I wasn’t surprised when she said she didn’t have one. She had just thrown some things together. So after she told me what she had put in it, I decided to put some measurements to it and came up with this recipe.
