I like to think of myself as the healthy muffin queen. I make some damn good muffins! I am constantly experimenting with new ways to make healthy muffins -I leave out the oil and sugar and replace it with raw honey from my Grandpa’s farm and Greek yogurt. This recipe actually came about when I was making my family’s favorite pumpkin muffins, then discovered I didn’t have any pumpkin. With some quick-thinking and improvisation, the chocolate blueberry muffins were born and were hailed a hit!
- Keep your muffins from turning purple by using slightly frozen blueberries!
- Raspberries are fabulous in this recipe too, they’re perfect with the chocolate.
