First things first. You might be wondering what harissa is – and I’m here to answer that question. Harissa comes in two forms: powder and paste. I used the powder spice mix in this recipe, which contains roasted red japone peppers, cumin, coriander, Hungarian and California paprika, garlic, salt and caraway.
In other words, hot. Hot and delicious.
Cod is a perfect canvas for a spice blend like harissa since on it’s own, it doesn’t have a really strong taste. If you’re trying to get more fish into your diet and don’t like the taste of fish? Well, this baked cod isn’t fishy in the least. It’s zesty and delicious and cooking the fish atop the vegetables and lemon give it amazing flavor.
And did I mention it’s moist? That too. No dry fish here!
Serve this baked cod on it’s own, with some brown rice or quinoa, or even some roasted red potatoes. It’s a simple, quick and satisfying weeknight meal!
